Cooking Diary #2 - Fake Okonomiyaki for two
Made something resembling an Okonomiyaki for lunch this sunday using what we had in the fridge. It turned out good.
Ingredients:
- 1/4 of a head of cabbage, shredded
- 2 carrots, shredded
- two eggs, beaten
- flour, eyeballed
- two tuna cans
- Hot Paprika, black pepper and grounded ginger to taste
Beat the eggs, season with the spices and salt, add flour until pancake batter consistency.
Put the batter in a hot greased pan, and then scatter on top the shredded veggies and tuna.
Cover and let cook until the eggs on top are cooked.
Decorate with mayo and ketchup. If you can, swap ketchup with teriyaki sauce.
Unfortunately we didn't have mayo in a squeeze bottle and had to spread with a knife.
All in all a satisfying meal.
